15 pounds fresh Roma or canning tomatoes, actually any tomato will do if there is excess in your garden.

2 TBSP extra virgin olive oil
2 yellow onions, chopped
8 cloves garlic diced
2 cups dry white wine
1 very large bunch Basil
1 tsp dried chili flakes
1TBL sugar
salt and pepper to taste, I use powdered chicken broth for salt

Preheat oven to 425
Cut tomatoes in half and put on a baking sheet, cut side down, bake 10-15 minutes. Cool and peel. This can be done several ways, you may just be able to squeeze all the meat and juice out, or hold in palm and spoon out into a bowl. Crush with hands and pull out any tough stems.

Heat olive oil in large pan, saute onions about 5 minutes add garlic and saute a few more minutes. Add wine and simmer until most of the liquid is cooked out. Stir in the tomatoes and simmer until reduced by half, about 1 1/2 to 2 hours.

Stir in salt, pepper and basil. If you do not want it chunky stir with and immersion blender, of smooth in a blender or food processor. If you do this, do not put the chopped basil in until after it is smooth. I like it just simmered and chunks are very small and can be mashed by hand too.

If you don't can it freezes well in freezer zip locks. I froze mine but used it up fast.
