1 lb. ground beef
1 cup chopped onion
1 cup chopped celery
1 cup chopped carrots
1 cup chopped potatoes
6 cups water
1 can diced tomatoes
1 cup tomato juice
1 envelope Lipton beefy onion soup mix
1 Tbsp. chili powder
1 Tbsp. Worcestershire sauce
1/2 Tbsp. sugar
1 bay leaf
salt & pepper to taste

Directions:
In a large pot, cook celery, carrots and potatoes in 6 cups of water until vegetables are almost tender. Meanwhile, brown beef and onions in a large skillet and drain grease. Add tomatoes, tomato juice, soup mix, chili powder, Worcestershire sauce, sugar, bay leaf, salt & pepper to the beef mixture. Simmer about 10 minutes. Add to pot of cooked vegetables in water. Simmer on very low heat another 10-15 minutes. Remove bay leaf before serving.

Note: This soup can also be made with stew meat or leftover pot roast, instead of the ground beef. Tastes great served with cornbread.
