1 cup chopped cooked chicken
1 cup mayonnaise
3/4 cup shredded mozzarella
1/3 cup finely chopped almonds
1 small onion, chopped
2 tsp. curry powder
2 tsp. lemon juice
1/2 tsp of each, salt & pepper
18 slices whole wheat sandwich bread
1/4 cup butter, melted

Directions:
Directions:
In large bowl, combine chicken, mayonnaise, mozza, almonds, onion, curry, lemon juice, and salt & pepper. Blend well, cover and refrigerate for 30 minutes. Trim crusts from bread and flatten slices with rolling pin. Spread about 2 Tbsp. of chicken on each slice and roll up. Cut each roll in 1/2 (or in three) depending on how large you want them. Secure with toothpicks. Place on baking sheet, seam side down and brush with melted butter. Bake in 375 degrees oven for 15 minutes. Let cool and then freeze in airtight container.

To reheat, bake frozen rolls in single layer on bakling sheet in 400 degrees oven for 10 minutes. (or until hot) Remove toothpicks before serving.
