2 cups flour
1 3/4 cups white sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
3 to 4 cups shredded carrots
1 cup vegetable cooking oil
4 eggs

Directions:
Directions:
Grease and flour pan ( 2 8-inch square pans or a 9x13 inch pan.) Stir in flour, sugar, baking powder, baking soda, salt and cinnamon. Add shredded carrot, oil and eggs. Beat until well mixed. Beat at medium speed for 2 minutes. Pour into pan. Bake at 350 degrees for 40 to 50 mins. Cool.

I have used this recipe as Rylan's birthday cake for quite a few years and Rylan requested it for his 2013 Graduation cake. He loves it!!!
