10 eggs
1/2 c. Romano cheese
Salt and freshly ground pepper to taste
2 T. plus 1 tsp. olive oil
8 oz. mild Italian sausage, casings removed
1 small onion, cut into 1/4" slices
1 red bell pepper, seeded and cut into 1/4" slices
1 1/2 c. baby spinach
1 c. tomato sauce
6 oz. fresh mozzarella cheese, sliced thinly
8 basil leaves for garnish

Preheat broiler. In large bowl, whisk together eggs, Romano, salt and pepper. Warm 1 T. oil in large, deep non-stick skillet. Cook sausage 6 to 8 minutes. Transfer to paper towel-lined plate. Drain sausage grease from skillet and wipe out pan. Add 1 T. oil to skillet and heat over medium-high heat. Cook onion and bell pepper 3 to 4 minutes. Reduce heat to medium, cook about 5 minutes more. Add baby spinach and cook for a few minutes. Add sausage to pan; pour in egg mixture. Cook, using spatula to lift cooked edges and allow uncooked eggs to flow underneath. Cover pan and cook a few minutes. When most of egg mixture has been cooked, drizzle tomato sauce over frittata and spread to edges. Arrange mozzarella slices on top and transfer skillet to broiler; broil for 3 to 5 minutes. Slide frittata onto serving plate and garnish with basil leaves.
