Ingredients:
Ingredients:
1 lb. beef liver
1 medium onion, chopped
4 hardboiled eggs, peeled
Sauté onion
Salt
Vegetable oil
Mayonnaise
1 dog, preferably a miniature schnauzer

Directions:
Directions:
Broil the beef liver until done. Push the dog out of the way so you can get to the oven. Cut off the hard rind around the edge of the liver. Keep pushing the dog away from you. Reserve the rind in a bowl for later. Don't mind the bite marks on your leg, they will heal just fine later.

Chop the liver in a wooden bowl with a hakke blade till you have a fine consistency. Mix in the chopped onion, hardboiled eggs, sauté onion and salt. The floor should be spotless and shiny by this point from the dog licking up all of the scraps that get out of the bowl as you chopped the liver. If you wimped out and used a food processor instead of a bowl and hakke to chop the liver and other ingredients the dog should still be biting your leg because it is hungry and you are not feeding him liver. Shame on you.

Mix in some oil and mayonnaise to make the chopped liver moist. It is ready to serve.

Cut up the reserved liver rind and mix some of it in with the dog food in a bowl. Be careful when you place it on the floor because the dog will knock you over trying to get to it. Count to five and the liver will be gone, the dog food will be all over the floor and the dog will be looking at you "Nu? Where is the rest of it?" Be firm and save some for the next day.

Personal Notes:
This story built into the recipe is just about how it went every time when Esther Sokol made her chopped liver recipe at the house in Fresh Meadows, Queens, NYC. Nibbles the miniature schnauzer seemed like he was 6 feet tall when it came to liver in the house and she never denied him his portions.
