1/2 cup pearl barley
1/2 medium onion, diced
2 stalks celery, diced
4 medium carrots, diced
2 medium all-purpose potatoes, diced
1/2 pound frozen green beans
1/2 pound frozen peas
Salt to taste
pepper to taste
1/2 cup parmesan cheese, to sprinkle on top

Directions:

1. Fill a 5 to 6 quart pot up to the handle with water. Put in barley and cook, uncovered, for 1/2 hour.

2. Add celery, carrots, potatoes, green beans, and peas.

3. Skim off any scum.

4. Simmer 1 to 1 1/2 hours, covered.

5. Add salt and pepper to taste.

6. Take about 1/2 the soup and strain all the liquid. Put liquid back in the pot. Put the solids into a food processor and puree. Add back to soup. This makes it nice and thick.


7. Serve in bowls with a spoonful of Parmesan cheese on top.
