2 cups cubed cooked chicken (or turkey)
½ medium onion, diced
1 cup thinly diced celery
1 small can mushroom pieces
1 small can pimientos, diced
1 can cream of chicken soup
1 cup skim milk
2 cups Minute rice
½ cup crispy chow mein noodles
2 tbsp. butter
2 tbsp. soy sauce
Dash of salt
Dash of pepper

Directions:

Preheat oven to 350ºF.

In a large skillet, heat butter, onion and celery until onion and celery are soft.

Add rice and stir often for 5 minutes. Add chicken, keep stirring. Add all the remaining ingredients except for the crispy chow mein noodles.

Stir about 5 more minutes, then transfer to a large baking dish or casserole dish.

Cover and bake 20 minutes.

Add the crispy noodles to the top of the casserole.

Bake uncovered an additional 10-15 minutes until top is golden brown.

The real name of this recipe is turkey tetrazzini, but Nana Gert DeVries always called it Yankee Noodle Surprise. This is a great dish to make with leftover turkey or chicken. It is another example of homemade comfort food.
