8 pop sticks

Crust:
4 c. graham cracker crumbs
2 T. butter, melted
1 T. sugar

Filling:
3 (8 oz.) pkg. cream cheese, softened
3/4 c. sugar
1 3/4 T. all-purpose flour
3 eggs
1/4 c. heavy cream
2 T. sour cream
2 tsp. of lemon zest
1 tsp. of vanilla extract

Other:
4 c. semi-sweet chocolate chips

Preheat oven to 350º.

Make the crust (or buy a ready made crust):
Grease an 8-inch cake pan or springform pan.
Combine cracker crumbs, butter, and sugar in a small bowl and still until well combines.
Press mixture into the prepared pan.

Set the crust aside.

Make the filling:
Combine cream cheese and sugar in a bowl and beat, using an electric mixer, until smooth and fluffy.
Stir in flour.
Add eggs, one by one, and then cream and sour cream, stirring until well combined.
Gently fold in lemon zest and vanilla.

Pour mixture over prepared crust.

Place pan in a water bath and bake 45 minutes to 1 hour, or until cheesecake has barely set.

Remove pan from water bath and let cool to room temperature before cutting into 8 equal slices. Slide a pop stick into bottom of each slice.

Freeze at least 1 hour.

Line a baking sheet with parchment paper.

Melt chocolate chips in microwave.

Dip cheesecake slices one by one into chocolate and gently shake off excess to create a thin, even layer of chocolate.

Place on a baking sheet and refrigerate at least 1 hour or until ready to serve.

In honor of the Minnesota State Fair and Nina's Bat Mitzvah, Elana made these Chocolate Covered Cheesecakes On A Stick! They tasted great and looked terrific too!
