3 large onions, sliced
I used one yellow, one white and one sweet (Vidalia)
1 clove garlic
olive oil and dab of butter
3 cans beef broth
2 cans chicken broth
3/4 package of Lipton Onion soup mix
1 tsp brown sugar
1/2 tsp pickling salt
1 spice bag (See Broccoli Soup)
2 tsp Worcestershire sauce

To caramelize the onions:

Using a Dutch oven, pour enough olive oil just to cover the bottom.
Set element to low-medium - the secret is to cook slowly for about 30 - 40 minutes stirring often. After 10 minutes of cooking add sugar, salt, and crushed garlic.
Add the soups, spice bag and Worcestershire sauce.
Simmer 30 to 40 minutes.

Place some French bread cubes (or whatever kind of bread you have)
in the bottom od a soup bowl. Add hot soup and top with Mozzarella cheese. Put under the broiler and remove when cheese is bubbly.
Be careful, this will be very hot.

This was the second time I tried making onion soup and I was surprised at how good it turned out. This is my adaption of many recipes that I read on-line.
