Nana's Cheesy Broccoli Soup Recipe

One bunch broccoli, peeled and chopped
3-4 green onionschopped
1 stalk celery, chopped fine
2 carrots, peeled and grated
spice packet (see below)
2 cans chicken broth or 2 cups water and chicken soup mix
1/2 cup sour cream
1/2 cup milk
1 tbsp. flour
grated cheddar cheese

Spice packet:
I use a square of cotton fabric and place 1/2 tsp pickling spice, 1 bay leaf, and a pinch of red pepper flakes into the center.
Pull up the corners to make a bundle and wrap with thread. This makes the spices easy to remove after cooking.

Saute onion and celery in a little butter.
Add the broccoli, carrots, spice packet, water or broth and simmer until tender.
Remove spices pack.
Using a potato masher, press vegetables to make smaller pieces or cool and put soup into a blender.
Add sour cream
Whisk the flour into the milk and add to soup and heat until thickened
Add cheddar cheese, stirring constantly until melted..

I watched my Granny Miller use spices in most of her cooking.
My Mom (Granny Buss) used spices as well, but didn't use a bag for them and it tasted really awful if you should bite into one. Yuck!!
