6 carrots cut into 1" slices
4 new potatoes, cut into 1" pieces
1 onion , cut into wedges
1 corned beef brisket, 2 to 21/2 lbs.
5-6 C. water
1/4 tsp. course, ground pepper
6 whole cloves
1 head of cabbage, quartered
1 bay leaf

In the crockpot, mix carrots, potatoes, onion, cabbage and corned beef brisket. Add water to cover. Add spice packet, (usually included with the corned beef), to the crockpot. If you use the packet, omit the pepper, cloves and bay leaf. Cover and cook on LOW for 10-12 hours. Remove and discard bay leaf. Remove brisket from pot and place on serving platter. Cut into thin slices. Place vegetables in a bowl and serve.
