1/2 c. shortening
1 1/2 c. sugar
2 eggs
2 oz. Red food coloring
1 tsp. cocoa
2 1/2 c. flour
1 tsp. baking soda
1 tsp. salt
1 c. Buttermilk
1 tsp. white vinegar
1 tsp. vanilla
Icing- 1/2 c. shortening
1/2 c. butter
1 tsp. vanilla
1 c. granulated sugar
3/4 c. warm milk

Using a mixer, blend 1/2 c. shortening, 1 1/2 c. sugar, eggs, food coloring and cocoa together. Mix well. Add in the flour, bk. soda, and salt. Fold in the buttermilk, vinegar, and 1 tsp. vanilla.
Grease and flour 2- eight inch round pans. You can use 9" pans but cake won't be as "tall." Bake at 350º for 30 minutes. While the cake is baking get ready to make icing by putting 1/2 c. shortening and 1/2 c. butter in a medium mixing bowl to soften. Cool cake 10 minutes in pan. Remove from pans and cool completely. Cut each cake layer in half, so you have 4 layers altogether.
For icing: Beat the softened 1/2 c. shortening and 1/2 c. butter for 10 minutes...no more, no less! Add 1 tsp. vanilla and 1 c. granulated sugar. Last, slowly add the 3/4 c. warm milk, and beat until the consistency of icing. Put icing on all 4 layers and finish icing sides.The icing is what really makes this cake "unique!"

My grandmother always made this cake for Christmas dinner. She told the story that a woman went to the Waldorf Astoria Hotel in NYC and ate this cake . She was bold enough to ask the chef for the recipe. He granted her request along with a bill for $200.00 because it was his own creation. Since she had to pay the bill she gave the recipe to a ladies magazine for publication and that's how my grandmother came upon the recipe! I always made it for my sons on Christmas and it became known as Jesus's birthday cake.
