1 1/2 lbs. corned beef, diced (the medium grade in a chunk from the deli.)
1/2 C. yellow mustard
1 large bag southern style frozen hash brown potato
2 large eggs, per person
salt/pepper
4 tbsp. bacon drippings
1/4 large, onion, chopped

Directions:
Directions:
Cut and dice the corned beef. Heat the oil or bacon grease in a large skillet. Add the potatoes and onion and cook on med-low until cooked through. Stir often. In 15-20 minutes, add corned beef and mustard; cook until it is well blended and heated through. Add s/p to taste. Serve with 2 fried eggs on or to the side. Don't expect leftovers.
