2 Slices bacon, in 1/8-inch dice
4 ounces pork butt, in 1/4-inch dice
1/2 C Burgundy wine
32 ounces canned pear tomatoes, crushed
2 ounces Parmesan cheese, grated (about 1 Cup)
2 T chopped parsley
1 T minced fresh garlic
1 tsp each: basil, oregano, salt
1 tsp black pepper, crushed
1/4 tsp crushed red pepper
4 ounces canned tomato puree

Directions:
Directions:
Place diced bacon and pork butt in large saucepan and cook over high heat until golden brown. Add red wine and bring to boil. Add tomatoes, cheese, and all the spices. Reduce heat and simmer over medium heat for 3.5 hours, stirring frequently to avoid scorching.

Add tomato puree and simmer 30 minutes more. Remove from heat and strain through a colander for smoother texture.

Serve with pasta.
