Chicken:
5-6 skinless boneless chicken breasts
1 egg, beaten
1 c. cornstarch
¾ c. sugar
4 Tbsp. ketchup
½ c. vinegar
2 c. chicken broth
1 c. regular rice
2 T. lemon juice
2 tsp. melted butter

Directions:
Directions:
1. Dip chicken in egg, then roll in cornstarch. Fry in small amount of oil or Pam until brown. Place chicken in shallow 9x13 baking dish.
2. Meanwhile, combine sugar, ketchup, and vinegar. Pour over chicken. Bake uncovered at 325º for 1 hour, turning chicken every 15 min.
3. While chicken is cooking, mix chicken broth, rice, lemon juice and butter together in a 2 qt. baking dish. Bake at 325º for 1 hour
(Serve with Chinese Chicken)
