12-18 flour tortillas
½ c. vegetable oil
3 c. light cream
6 chicken bouillon cubes (or 6 tsp. granules)
16 oz. grated cheddar and/or Monterey jack cheese
1 small onion, finely chopped
1 Tbsp. vegetable oil
2 c. cooked chicken, shredded
1 small can green chilies, chopped
1 garlic clove, crushed
Salt and pepper

Directions:

1. Sauté onion in 1 Tbsp. oil until soft. Add chicken, green chilies, garlic, salt and pepper. Simmer 20 minutes. Set aside. In another pan fry tortillas in ½ c. oil. Set aside.
2. Warm cream, add bouillon and stir to dissolve.
3. Dip tortillas in cream mixture. Add chicken filling, roll up tortillas, and place tortillas smooth side up in a greased 9x13 inch casserole dish. Pour remaining cream mixture over tortillas (it seems like a lot but it will get absorbed). Top with cheese.
4.Bake at 375º for 30 minutes.
*May be made ahead of time and refrigerated or frozen.
**It really makes it taste better if you fry the flour tortillas. More fattening, but way better flavor
