1/2 cup of Shortening
1 cup of sugar
2 eggs
1/2 tsp of vanilla extract
2 to 3 mashed ripe bananas
1 1/4 cup of sifted all-purpose flower
3/4 tsp of baking soda
1/2 tsp of salt
1/2 tsp of cinnamon
1/4 tsp of nutmeg
1/2 cup of preferred nuts (I use pecans or walnuts)

1. Preheat Oven to 350 degrees
2. Cream shortening & sugar until it is fluffy
3. Add the eggs one at a time while beating them into the shortening and sugar fluff
4. Stir in mashed bananas
5. Sift together dry ingredients
6. Add dry mixture (a little at a time) to banana mix
7. Add nuts and mix them into the batter
8. Pour the batter into a greased 9x9x2 inch pan
9. Bake for 30-35 minutes

*If you bake it in a loaf pan I suggest covering the top with foil to keep it from browning too fast since it will have to bake for a little longer. You also may need to adjust the temperature
