2 16 oz cans canned sweet potatoes in syrup, or fresh cooked sweet potatoes
1/3 cup firmly packed light brown sugar
2 tablespoons butter or margarine
1/2 teaspoon grated orange rinds
1/4 teaspoon ground cinnamon

Directions:
If you are using fresh sweet potatoes, boil them until tender, replace the syrup from the cans with water, and add some extra sugar and butter to the recipe.

Drain sweet potatoes, reserving 1/4 cup of the syrup. In large skillet heat brown sugar, butter, orange rind, cinnamon and reserved syrup to boiling. Reduce heat and simmer until slightly thickened, about 1 minute. Add sweet potatoes; heat through, gently stirring to coat potatoes with glaze.

MICROWAVE DIRECTIONS:
Drain sweet potatoes, reserving 1/4 cup of syrup. In 2-quart microwave safe dish, place brown sugar, butter, orange rind and cinnamon and reserved syrup. Cook at HIGH 4 minutes until mixture is slightly thickened. Add sweet potatoes, gently stirring to coat with glaze. Cook at HIGH 1 minute until heated through.

Oven Directions
Sweet potatoes can be baked in the oven. Place brown sugar, butter, orange rind and cinnamon and reserved syrup in baking dish, cook in hot oven 10 minutes until butter is melted and mixture is slightly thickened. Ad Sweet potatoes, coating with glaze, then bake up to 20 minutes (On Thanksgiving the candied sweets are very flexible and can go in when the Turkey is removed.)

A staple of any Turkey dinner, and sometimes with Ham, candied sweet potatoes were a favorite of Mom's. When making them casually, Mom left out the cinnamon and almost always left out the orange rinds.
