1 medium cucumber
1 clove garlic, finely chopped
3 green onions, finely chopped
1 tsp. olive oil
1/2 tsp. white vinegar
1/2 tsp. dried dill weed
1 carton (8 oz.) plain yogurt

Directions:
Directions:
Peel cucumber, cut in half lengthwise and scoop out the seeds. Then, cut the cucumber into small chunks. In a small bowl, mix cucumber with garlic, green onions, olive oil, vinegar, and dill weed. Add yogurt and stir gently to combine. Cover and chill in the refrigerator for 2 hours. Serve as a dip with pita bread and/or raw vegetables. Also great on sandwiches or gyros!
