3 lbs cooked and cooled corned beef brisket
3 C potatoes, boiled and diced
1 C diced onion
1 can diced tomatoes
1/2 tsp salt
1 tsp black pepper
Eggs

Directions:
Directions:
Preheat oven to 350º.

Dice the corned beef into small portions using either a knife or food processor. In a large bowl, mix the meat, potatoes, onion, tomatoes, salt and pepper. Place mixture in a roasting pan.

Bake for 30 minutes or until browned on top.

Serve with 1 or 2 fried eggs on top.
