1 cup diced onion
1 cup diced celery (with tops)
1/2 stick (4 tbsp) butter
1 pkg frozen chopped broccoli
1 cup minute rice
1 cup water
1 can cream of chicken soup
1 8 oz jar Cheese Whiz
1/2 tsp. dried thyme
fresh ground black pepper to taste
pinch to a dash of dried cayenne

Heat oven to 350º F
Saute chopped broccoli and celery in butter in large saucepan. Add in frozen broccoli and cook for 5 minutes. Add in minute rice, water, soup and Cheese Whiz and stir to combine. Add in thyme, black pepper and cayenne pepper (or a good shot of Tabasco if you don't have cayenne) Pour into greased casserole dish, sprinkle a little paprika on top, and bake for 30 minutes.

(Note: size of frozen broccoli packages have shrunk from 16 oz. to 12 oz. since this recipe was given, so the resulting casserole seems more "ricey" now. Also, I generally substitute Ragu Double Chedder pasta sauce for the Cheese Whiz, but any yellow-cheese-based sauce will work). I generally double the recipe for holidays, because 6 servings just won't do it.
