11 Potatoes, cooked and chopped
1 lb. Bacon, chopped
1 Large onion
3/4 C. Sugar
1 C. Vinegar
1 1/2 C. Cold water
1 1/2 t. Salt
Pepper to taste

Directions:
Directions:
Brown bacon and onion until very brown. Put on paper towel. Drain all but 2 tablespoons grease. Mix together cornstarch, sugar, vinegar, water, salt and pepper until smooth. Add to bacon drippings and cook slowly until thick. Add potatoes, bacon and onion mixture. Put into casserole with lid. Refrigerate overnight. Next day, bake 20 minutes at 400º , then 30 minutes at 300º, then 30-60 minutes at 200º.
