2-3 tbsp. butter
2 medium onions, slivered thin
6 boneless skinless chicken breast halves
3 Tbsp. Ground Cinnamon
3 c. applesauce
1 c. apple Juice
1/2 c. brown sugar
1/4 c. balsamic vinegar

Directions:
Directions:
In a dutch oven/6 qt. pan, saute onions in butter. Dredge chicken in cinnamon in large bowl. Stir to coat evenly. Place chicken in pan with cooking onions. Cook 8-10 minutes, turning and stirring onions. Add apple juice when chicken starts to stick. When chicken and onions are mostly cooked thru, add applesauce and brown sugar. Stir well. Simmer 15-20 minutes uncovered, stirring occasionally. Just before serving, still in balsamic vinegar. Recommend serving over white rice.
