1 (5 lb.) Beef Rib Roast
1 tsp. Accent seasoning
2 Tbsp. McCormick Grill Mates Montreal Steak Seasoning
2 -3 Tbsp. Michelle's Secret Rub

Directions:
1. Allow roast to stand at room temp. for 1 hour.
2. Preheat oven to 375 degrees. Combine ingred. in cup. Rub seasonings into the roast. Place roast in pan so that the fatty side is UP and the rib side on the bottom.
3. Roast meat for 1 hour in preheated oven. Turn the oven OFF and leave the roast inside. DO NOT OPEN THE DOOR. Leave it in there for 2 1/2 to 3 hrs.
4. 30 to 40 minutes before serving, turn the oven back on at 375 degrees and reheat roast. Check roast and when it measures 135 degrees on internal temperature thermometer, remove roast, cover in foil and let rest for 10 minutes before serving.

Roast will turn out amazing. If you use a smaller cut of meat, reduce cooking time to poundage accordingly. * If for some reason, roast should come up to 135 degrees after 2+ hours, remove roast and cover with foil. Let roast sit covered for at least 15 minutes.
When ready to serve, slice and heat until just warmed. If some do not like medium rare, slice roast and warm in heated Au Jus Gravy and meat slices will quickly cook to medium.
