Dressing:
3 tbsp white balsamic vinegar
1 tbsp dijon mustard
1 tsp honey
2 cloves garlic crushed
1/2 tsp pepper
1/2 c. olive oil

Salad
1/2 c. quinoa
1&1/2 cups yams peeled and cut into cubes
1 tbsp olive oil
1/2 tsp pepper
1/2 tsp. salt
1 -2 14 oz tins chick peas, rinsed and drained (this made a lot of chick peas)
1 carrot peeled and grated
1 c. spinach
1/2 cup parsely
1/2 c. feta


Directions:
Directions:
Cook quinoa in 3/4 c. water and let stand and cool
toast yams at 350 (toss them with olive oil and salt and pepper), for about 20 minutes
Then let cool. Mix everything together.
