Grease 9/13" pan very well

4 eggs OR 8 egg yolks & 4 Tablespoons cold water
1 c. sugar
1/4 tsp. salt
1 c. flour
2 tsp. baking powder
1 tsp. vanilla
6 T. boiling hot water

Directions:
Directions:
Break eggs (or put egg yolks/water) into bowl, add salt and beat until frothy. Add baking powder and beat until thick and lemon-colored. Gradually add sugar, beating until dissolved (rub a little of the batter between finger and thumb; if not grainy, it is done). Add vanilla and mix well. Add flour all at once and mix with wooden spoon. Lastly, add the boiling water all at once, stirring in quickly.
Immediately place into prepared pan (starts cooking right away). Bake in preheated 400° oven for 10-12 minutes. Bake until done--test with finger pressure. Turn out on towel covered with powdered sugar and roll up by flipping towel. Let cool in towel (if using a cream filling) or unroll immediately and spread with jelly or jam; re-roll in towel and cool on rack.

This is Zachary's grandmother's recipe--she loved experimenting. This is a good way to use up egg yolks if just eating egg whites for breakfast.
