1 small Butternut Squash; peeled and cut into bite-size cubes
1 1/2 cup chicken stock
1/2 small red onion, peeled
3 T. dried cranberries (or orange-flavored)
2 T. butter
1 T. olive oil
1 T. brown sugar
3 T. slivered almonds (or sliced)
1 tsp. shredded Parmesan cheese
Salt, orange zest (if using plain cranberries) to taste.

Directions:
Bring chicken stock, squash, onion, cranberries and orange zest to a boil in saucepan.
Bring to a boil, reduce heat to low, simmer until squash is tender; pierce with a fork - about 15 minutes; Drain.
Heat butter and olive oil together in a large skilled over medium heat.
Gently stir in butternut squash mixture into the hot butter and oil; sprinkle with brown sugar.
Gently flip vegetables when browned, about 5 minutes per side.
Sprinkle with almonds, Parmesan cheese and salt.
