1 c shortening
¾ c sugar
¾ c packed brown sugar
2 eggs well beaten
1 tbsp hot water
2 c flour
½ tsp salt
1 tsp soda
1/8 tsp cinnamon
3 c oats
1 c dried cranberries
½ c pecans, coarsely chopped
½ c mini-chocolate chips

Directions:

Cream sugars and shortening. Add eggs and water. Mix well. Add flour, soda, and salt. Mix well. Add oatmeal, cranberries, nuts, and chocolate chips. Mix well. Drop rounded spoonfuls onto a ungreased cookie sheet. Flatten slightly with the bottom of a glass sprayed with cooking spray to prevent dough from sticking to glass. Bake at 350 for 10 minutes. Let cool on the cookie sheet for 3-5 min. Transfer to counter. Store in an airtight container.
