Ingredients:

2 tbsp. chicken stock or vegetable stock or water
½ cup sweet onion chopped
2 tbsp. fresh ginger minced
2 skinless boneless chicken breasts cut in 1 inch cubes
1 1/2 cups fresh mushrooms sliced (optional)
4 cups bok choy chopped
2 tbsp. soy sauce
1 tbsp. rice vinegar or wine
Salt and pepper
Pinch of red pepper flakes

Directions:
Directions:
Heat broth in skillet.
Add onions and stir for 2 minutes.
Add ginger and stir for another minute or so.
Add chicken and continue to sauté. I add about a tablespoon of oil at this point.
After 2 - 3 minutes add bok choy and mushrooms and sauté for another 3 - 4 minutes.
Add soy sauce, rice wine vinegar, and red pepper flakes.

If I remember to start in time I marinate the chicken in a little soy sauce and chipotle pepper flakes for 1 - 2 hours. Will be gluten free if stock and soy sauce are.
