2 pounds ground beef
1 onion, chopped
2 teaspoons minced garlic (a couple of cloves chopped or pushed through a garlic press)
Taco seasoning, if available
1 4oz can diced green chili peppers (found in the Mexican section of the grocery store)
1 can diced tomatoes
1 16oz jar salsa (fresh salsa is best, but it’s expensive and inconvenient)
2 cans black beans
A package of flour tortillas (smaller size is easiest to work with)
Shredded cheese of choice

Heat oven to 375.
Brown the ground beef in a skillet. Drain any excess fat. Add onion and garlic, and cook a couple of minutes more. If you have taco seasoning on hand, add a bunch (a tablespoon or two; adds nice flavor). Mix in green chili peppers, tomatoes, salsa, beans. Stir and cook until flavors get a chance to blend.
In a round, not-too-wide oven-safe pot (a casserole dish), layer some beef mixture, then a some tortillas, then meat, then cheese. Keep layering until you run out. Top with cheese. Bake until all warm and bubbly (20-30 minutes).
