2 pounds tilapia fillets (two bags of frozen tilapia, thawed)
½ cup parmesan cheese
¼ cup butter (perhaps a bit less)
3 tablespoons mayonnaise
2 tablespoons lemon juice (easiest if you have bottled lemon juice; otherwise, about the juice of one juicy lemon; be careful of the seeds if you squeeze the juice into the bowl)
¼ teaspoon dried basil
1 teaspoon garlic powder
½ tablespoon paprika

Mix together all ingredients except the tilapia. Turn on the oven’s broiler. Place fish on a pan and broil a couple of inches from the top of the oven (the broiler is the heat from the top coils of the oven) for 2-3 minutes. Flip the fillets and broil for another 2-3 minutes. Remove pan, and cover each fillet with some of the mixture. Return to the broiler until topping is bubbly and the fish are fully cooked (they’ll flake easily with no need for a knife). Avoid overcooking the fish. It makes fish tough.
