Christmas Shortbread Recipe

Granny's Shortbread:

1/2 pound butter
1 cup icing sugar
2 cups flour

Nana's Shortbread:
1 pound butter softened
1 cup berry sugar
4 cups flour

Directions:
Directions:
Granny's:
Sift flour and icing sugar together four times.
Mix a little at a time with softened butter.
Roll into rolls and chill overnight.
Cut cookies, 1/4 inch thick. and place on cookie sheet.
With a fork, poke each cookie 3 times.
Bake 300 degrees for 15 minutes.

Nana's:
Sift sugar and flour together.
Add to the butter and knead the dough to blend butter and flour together.
(This can take awhile)
Roll out to 3/8 inch thickness. Flour cookie cutter and cut out and place on a parchment paper lined cookie sheet.
Bake 350 degrees for 10 minutes.

Nana used to make these well ahead of Christmas and store them in a cookie tin to mellow the flavour.

When Pappy and I got this recipe, we made it together. It was his job to do the kneading and I was the supervisor. It always turned out good!
