Shrimp Gumbo Recipe

5 lbs Shrimp - cleaned
1 head Celery with tops
1 or 2 bunches of Green Onions with tops
1 Bell Pepper - chopped
Handful of Parsley
2 Big tbps Flour
4 qts Water
Salt
Cayenne Pepper
1 pint Oysters with liquid

Directions:
Directions:
Chop celery, green onions, green pepper and parsley and saute in large pot in 2 tablespoons or oil heated. Saute until tender.

In separate skillet, brown the flour in dry skillet (no grease), stirring constantly until very brown. Mix with sauted' vegetables.

Add water, salt and cayenne pepper to taste to vegetable mixture. Boil 20-30 minutes. Add shrimp and boil until pink uncovered. Turn heat to low and add oysters with liquid and simmer.

Server over rice with chopped onion tops and with Tabasco and gumbo file.
