2 cups dried apricots
1 cup light raisins
2 cups uncooked rice (white or brown)
½ cup butter
1 cup minced onion
1/2 cup chopped sweet pepper (any colour)
½ teaspoon curry powder
1 cup chopped or sliced almonds

Directions:
Directions:
Cover the apricots and raisins with warm water and soak for ½ hour.
Drain the fruit and finely chop the apricots into pieces the size of the raisins.

Cook 2 cups of rice.
Preheat oven to 375 º F. Toast almonds in a skillet. Remove and let cool.
In the skillet melt ½ cup butter.
Saute 1 cup minced onion, 1/2 cup chopped sweet pepper, and ½ teaspoon curry powder.
Add the toasted almonds, the drained and chopped fruit, and the boiled rice
Correct the seasoning. Place in a greased baking dish and bake covered for about 30 minutes.

Other dried fruit can be subsisted for apricots and raisins.
I use fewer onions and a little more sweet pepper. This recipe makes a large amount and can be cut in half. Leftovers reheat well in a microwave or oven.
