2 - 8 oz. boneless skinless chicken breasts (I often use chicken thighs)
2 tbsp. bouillon powder or two cubes oxo (I use a very small amount of these)
1 tbsp. soy sauce
1 clove garlic
¾ tsp. salt
2 tsp. cornstarch
2 tbsp. lemon juice
½ cup water (I use the juice drained off the pineapple)
¼ cup plus 1 tbsp. cider or rice vinegar
1 small can unsweetened pineapple chunks drained
1/2 cup coarsely grated carrots (or finely chopped)
1 sweet pepper (any colour) cut in small pieces (optional)
1 tsp. grated lemon rind
1 cup shredded lettuce

Marinate chicken in bouillon, soy sauce, garlic, and salt for 1 hr. or so.
Broil the chicken till cooked.
While chicken is cooking make the lemon sauce by putting the cornstarch, lemon juice, and water in a small sauce pan. Mix. Add pineapple, carrot, sweet pepper, and lemon rind. Mix and bring to a boil. Simmer on low heat until vegetables are tender and the sauce is thick.
Place chicken pieces on a platter and pour the sauce over the chicken. Surround with shredded lettuce and serve.
If less worried about calories the chicken can be stir fried and served over rice.
