2 eggs
1/2 cup sour cream
1 cup flour
1/2 tsp baking powder
1/2 tsp baking soda

Enough milk to make a batter

In mixing bowl place sour cream.
Separate the eggs adding yolks to cream.
With clean beaters, whip up egg whites until stiff.
Add remaining ingredients to cream and beat to make batter.
Gently fold in the egg whites (this makes them light and fluffy)
Using my griddle, I set the temperature at maximum. Preheat griddle and spray with Pam. Pour batter onto griddle and cook until bubbles begin to form. Cook other side, turning once.
Using a non-stick fry-pan, spray with Pam. Set heat at about number 3 or 4 (medium low) This seems to work the best when using the stove.

I learned this method from Granny Miller, but she made the best waffles as well. Beating the egg whites makes other things light as well, such as deep-fry batter, cheesecake, etc.
