3 cups warm water
1/4 cup sugar
1 tsp salt
6 tbsp. oil
2 tbsp. fermipan yeast
2 ggs beaten
7-9 cups flour

Directions:
To mix dough:
Place 6 cups flour into a large bowl. Add 2 tbsp. yeast and mix well.
In a separate bowl, place 1/2 cup hot, hot water from the tap.
Add the sugar and salt and stir to dissolve. Add 1 1/2 cups water at a temperature to make the liquid luke warm. Add beaten eggs and oil.
Make a well in the center of the flour and add liquid in small amounts and blend in. Keep adding flour as necessary to keep the dough from sticking.
Turn onto a floured board and knead until smooth and elastic.
Place back in bowl and put in a warm place to rise. Set timer for 15 minutes, punch down dough and repeat 2 more times. Now the dough is ready to shape buns.

For Dinner Buns:
Use a parchment paper-lined cookie sheet. Break off small portions of dough and shape into ball and place on sheet. Let rise until double in bulk about 1 1/2 hours.
Preheat oven to 350 degrees and bake 15-20 minutes.

For Cheese Buns:
Roll dough into an oblong shape. Brush with melted butter.
Sprinkle dough with grated cheese (We used cheddar, a little mozzarella and parmesan to give it some zip)
Roll jelly-roll fashion and cut off pieces about 1 1/2 inches wide
Carefully place onto parchment paper-lined cookie sheet, let rise and bake.

For Cinnamon Buns:
Add some grated orange rind to the flour for extra flavour, if you wish.
To prepare pans: Melt 1/2 cup butter and divide into 2 cake pans.
Add 1/4 to 1/2 cup brown sugar to each and stir to mix. Spread evenly around the pan.
Roll dough into an oblong. Spread with melted butter. Sprinkle about 3/4 cup white sugar and cinnamon over the dough.
Roll jelly-roll fashion and cut into 1- 1/2 inch slices.
Carefully lay bun into cake pan, about 9 in each.
Let rise until double in bulk and bake as above.
After removing buns from oven, invert pan over a large dinner plate so the brown sugar forms a delicious topping for the buns.

The first time I made anything with yeast was when I was 16 years old. A severe snowstorm brought Winnipeg to a halt so school was cancelled so I tried making bread. IT WAS LIKE A ROCK!!!
Pappy and I like to make buns when the weather was cold or we had a snowstorm. We decided this method was the best and it seemed we could never make enough!
