1/2 cup uncooked quinoa
1 c raspberries
1 c chopped kale
1/4 c chopped almonds toasted
2 tbsp pumpkin seeds toasted
1/4 c chopped mint or basil

Dressing
2 tbsp lemon juice
2 tbsp oil
2 tsp dijon mustard
1 tbsp ginger
2 tsp honey
salt and pepper to taste

Directions:
Directions:
Cook quinoa according to package directions.
Place in a large cooking bowel and cool.
Add raspberries, kale, mint, and almonds and seeds.
Whisk together dressing ingredients and mix with quinoa.
Season with salt and pepper.
Refrigerate until ready to serve.
