2 tbsp sugar
1/2 lb butter
2 egg yolks
1 cup water

Foil wrapped clothespins are stored in the freezer.

Cut in flour, sugar and butter like pie dough. Beat 2 egg yolks and water together. Then mix this into the flour mixture. Cover and refrigerate 1 hour. Roll out to 12x24". Spread with 1 stick of soft butter. Fold like a handkerchief until it's 4" square (ish). Refrigerate 1 hour. Roll out again to 12x24". Spread with 1 stick of soft butter. Fold like a handkerchief until it's 4" square (ish). Cut into 4 pieces, individually wrap and refrigerate 1 hour.

Roll one piece of dough on a floured board to a thin 1/8" thick rectangle 8" wide. |Brush the egg yolk and water mix on with a pastry brush and then cut into strips 8" long and 5/8" wide. With egg side out around a wooden clothespin (wrapped in aluminum foil), wrap tightly overlapping dough slightly. Place on a greased pan with free end of dough down under clothespin on pan. Bake 375º 15-18 minutes. Remove immediately from clothespin, holding end of pin with a potholder and pulling the lady lock shell off with small tongs. When cool, seal in airtight container.
