diced vegetables, whatever you like:
onions, tomatoes, celery, carrots, zucchini, mushrooms, etc

garlic
2 cups water or broth
1 small can V-8 juice
1 cup lentils uncooked
olive oil

Sazon seasoning by Badia (optional)

Directions:
Directions:
Saute vegetables and garlic in olive oil for about 5-7 minutes.

While the vegetables are cooking, rinse and sort the lentils. Remove any twigs and lentils that float to the top as you wash them. Then drain.

After about 7 minutes, add the lentils and the seasoning to the pan.

Add the V-8 juice.

Let the moisture cook down and add a cup of broth or water.

After this boil down and is absorbed by the lentils. Check to see if the lentils are still hard. If so add more of the broth or water. Keep adding broth or water until the lentils are soft or slightly al dente. Adjust seasoning with salt and pepper.

This is a variation of Gia's recipe. You can vary the vegetables. You can start with turkey bacon or real bacon. You can leave out the juice and use all broth or water You can use other seasonings besides the Badia Sazon. Lots of variation possible here.
