Ingredients: 1 cup Bran Flakes cereal 1/4 cup milk (you might need a little more milk if the flakes seem dry) 1 cup all purpose flour 1/2 cup honey 1/4 cup unsalted butter, melted 2/3 cup mashed ripe bananas (you know I freeze all black bananas for future cakes) 1 1/2 teaspoon baking powder 1/2 teaspoon salt 1/2 teaspoon cinnamon 1/4 teaspoon baking soda 1/4 teaspoon ground ginger 1/4 teaspoon ground nutmeg raisins or dried cranberries if desired

Directions:Heat oven to 375. In a small bowl, soak the cereal in milk for 5 minutes. You might need to add a little more milk. In a large bowl combine remaining ingredients. Add cereal. Beat at medium speed for 1-2 minutes or by hand until well mixed. If you use the jumbo muffin papers, fill 2/3 full . Bake for 20-25 minutes or until the tops spring back when lightly touched. Cool and enjoy. |

Notes: I found this recipe on the side of a box of generic brand bran cereal. I changed the recipe by adding an egg and baking the muffins in jumbo (3 1/2 inch) muffin papers. You can buy aluminum muffin liners that do not require a muffin pan.
When it comes to muffins, big is better.
