1-1/4 c. flour
1 tsp. baking soda
1/4 tsp. salt
1 c. creamy peanut butter
1/2 c. butter, softened
1/2 c. brown sugar
1/4 c. sugar
1 egg
1/2 tsp. vanilla

Directions:
Directions:
In a small bowl, whisk together the flour, baking soda, and salt. Set aside. In a large bowl, mix the butter/margarine, peanut butter, egg, vanilla, brown and granulated sugars until blended. Add the flour mixture and beat just until blended. Drop dough by heaping tablespoons onto ungreased cookie/baking sheets. With a fork, press criss-cross patterns into the top of the dough. I like to sprinkle a little bit of sugar on top. Bake at 350 until lightly browned, 15-20 minutes. Rotate the racks halfway between baking time. Transfer to wire racks to cool.
