Upside-down Orange Rolls Recipe

Preheat oven to 425 degrees F.

Orange Mixture:
1/4 cup butter
1/2 cup white sugar
1/2 cup orange juice (fresh if possible, but frozen works well)
2 tsp grated orange rind

Combine in a saucepan and boil gently two (2) minutes. Pour into 12 greased muffin cups. If you like lots of sauce, double this recipe.

Biscuit Mixture:
Sift together:
2 cups flour
1/2 tsp salt
3 tsp baking powder
2 Tbsp sugar

Cut in till butter is finely integrated:
1/4 cup butter/margarine

Stir in:
3/4 cup milk (or a little more if mixture seems dry)

May also use a favorite sweet yeast roll dough.

Stir the dough till it follows fork around the bowl. Knead about 1/2 minute. Roll out or pat out about 1/4 inch thick. Sprinkle dough with 1/4 cup sugar, 1 tsp cinnamon and (optional) 1/3 cup raisins or golden raisins. Roll the dough up lengthwise and slice into about 12 rolls. Place in the orange mixture in the muffin cups.

Bake in a preheated 425 degree F oven for 20 minutes or till biscuits are lightly browned.

Carefully turn out rolls with spatula or knife and turn upside down on plate so that orange sauce is on top. Scoop out remaining sauce onto rolls.
Serve when fresh and slightly warm.

My mother, Gwen Greene, picked up this recipe from a fellow missionary wife in Swaziland. She's served it since I was a little girl 60 years ago. The rolls were a special favorite of my father, David, and whenever I make them, they soon become a hit with my guests.
