Ingredients: 1 qt. milk 2 eggs, separated 2/3 c. sugar 1 c. grated coconut (fine or medium shred) 2 c. broken saltine crackers (not rolled into crumbs) 1 tsp. vanilla extract

Directions: |
Directions:In a heavy 3 qt. pot heat the milk almost to boiling point. In a bowl beat egg yolks and sugar together until frothy. Gradually add to the hot milk. Reduce heat to medium. Crumble the crackers into the milk. Stir constantly until mixture comes to a boil. Add the coconut and stir until pudding bubbles thickly. Remove from heat and add vanilla. Fold in stiffly beaten egg whites. Serve warm or cold. |

Notes: This wonderful recipe comes from Betty Groff from Groff's Farm Restaurant in Mt. Joy, PA. (Pinkerton Road). Jim and I love going to Lancaster and checking out new roads. One such day with John and Bettye Hamlin; Buster and Janette Watkins, we came upon Groff's Farm. What a treat. We were the only patrons at the time and we were treated like royalty! We've never been able to find the farm since - now because Mom wanted participation in producing a cookbook, I came across Abe & Betty Groff's business card with the Cracker Pudding recipe on the back. Can't wait until our next trip. Groff's, here we come!
