Yabra (Rolled Grape Leaves) Recipe

1 lb ground lamb or beef
1 cup rice, blanched
1 t. salt
11. cinnamon
1/4 t. pepper
1/2 stick butter (optional), softened
1 jar grape leaves or the equivalent fresh.
pork ribs, rhubarb, sour grapes (optional)
water or chicken broth
freshly squeezed lemon juice (optional)

Directions:

Mix rice and meat together. Add spices and mix. Mix in butter, if using, with you hand.

Line the bottom of the pan with the ribs. Roll the grape leaves and fill the pan. Intersperse with the rhubarb or sour grapes. YouTube has a number of videos which demonstrate the method. Search "rolling grape leaves."

Cover the grape leaves with boiling water or chicken broth. Place a heavy dish on top. Cover the pan and bring the liquid back to a boil. Place on low heat and cook until done. Drain off any excess liquid* and shake the pan to loosen the rolls.

If rhubarb or grapes haven't been used, pour the lemon juice over all and let set for 20 minutes

*Some people save this liquid and use it for dipping bread during the meal. It is quite flavorful.
