2 qts cooked pinto beans (if beans are thick add 1/2 c water per qt beans)
1 med onion diced
3 Roma tomatoes diced
3 sections garlic chopped fine
3 strips lean bacon cut into narrow strips
1/2 bunch fresh cilantro chopped
1 small can diced mild green chilis (can substitute 1 or 2 seeded chopped fresh jalapeño
1 tbsp ground cumin
Salt and pepper to taste

In large Dutch oven sauté bacon pieces, onion, tomato, garlic and cilantro until onions are transparent. Add two qt pinto beans, diced chilis, cumin and salt and pepper too taste. Let simmer for 1 1/2 hrs. Great served with Spanish rice.
