1/3 c. hot water
2 tsp. instant coffee granules
2 T. sugar
2 3 oz. pkg lady fingers, split
1 8 oz. marscapone cheese or cream cheese
1 1/2 c. powdered sugar, divided
2 T. chocolate syrup
1/2 c. chocolate chips
1 T. butter
1 T. heavy cream

Directions:
Directions:
Stir together first 3 ingredients until sugar is dissolved. Set aside 2 T. mixture and brush cut sides of ladyfingers with remaining coffee mix.

Stir together cheese, 1/2 c. powdered sugar and chocolate syrup until blended. Spoon or pipe cheese mix onto 24 cut sides of ladyfinger halves. Top with remaining halves.
Microwave chocolate chips, butter, and cream for 30 sec. stir twice. Place in small heavy duty zip-lock bag. Snip hole in corner and drizzle over eclairs. Let stand until firm. Stir together reserved coffee mix and remaining 1 c. powdered sugar. Stir until blended. Place in zip-lock bag; Snip hole in corner and drizzle with coffee and powdered sugar mix.
