1/4 C. butter
1 onion chopped
2 cloves of garlic minced
1 carrot finely chopped
1 bay leaf
1/2 tsp. thyme
3 C. lobster meat
1 T. paprika
1/2 tsp. celery salt
1 cup pinot grigio
1 c. chopped tomatoes
6 c. vegetable broth
1 c. heavy cream
2 T. chopped fresh parsley
2 T. cooking sherry
sea salt and ground pepper to taste

Melt butter over medium heat in a large stock pan and add onion, garlic, carrot, bay leaf, thyme, paprika, celery salt, salt and pepper. Cook stirring occasionally until tender. Add wine, tomatoes and bring to a boil them simmer for 5 minutes. Add the broth and again bring to a boil. Reduce heat to low and add the lobster meat and simmer for about 15 minutes. Remove bay leaf and remove from heat. Pour soup mixture into a blender and process until smooth. Return mixture back to pot and add cream and sherry and bring to a slight boil. Now ready to serve
