12 carrots, scraped
3 TBL. good olive oil
Kosher salt
freshly ground black pepper
2 TBL. fresh or freeze dried dill

Preheat oven to 400º

Cut carrots diagonally into 3-4 inch slices, then half lengthwise. If they are small, or the "baby" carrots, leave whole (they will shrink slightly when cooked). Toss in a bowl with the olive oil, salt & pepper. Pour onto a foil covered sheet pan (with sides) in 1 layer. Roast in the oven for about 20-25 mins.until tender and slightly browned. If you like them crisp/tender take out at 18-20 min.

Sometimes I put the carrots directly on the foil covered pan, then drizzle with the olive oil on them and mix around with my hands. I love dill, and put more than is stated. YUMMY!!!!! We've cooked them on the grill also.
